  • 4 cups apples, medium diced (Braeburn or Granny Smith)
  • 2 cups chopped walnuts, toasted
  • 1/4 cup fresh dill
  • 3/4 cup celery, thinly sliced
  • 1 cup green grape, halved
  • Dressing
  • 1/4 cup rice wine vinegar (or apple cider vinegar)
  • 1/4 cup walnut oil
  • 1/4 cup plain low-fat yogurt
  • 2 teaspoons Grey Poupon mustard
  • 1 1/2 tablespoons orange juice
  • 1/2 orange, zest of
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

    Chop walnuts and toast 350°F for 5-10 minutes. Let cool.
