  • 2/3 cup lemon juice
  • 1 cup sugar
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon

    Peel and remove seeds and pulp from zucchini; then slice, and cut the slices into quarters.

    Simmer, covered, in lemon juice until zucchini is crisp-tender.

    Add sugar and spices, and simmer a few more minutes.

    Next, make the pastry:

    4 cups flour 2 cups sugar 1/2 teaspoons salt 1 cup margarine

    Mix all ingredient with a pastry blender Reserving one cup for topping adding 1 teaspoons cinnamon.

    Remove another 1/2 cup and add to cooked zucchini.

    Place remaining pastry mix on greased baking pan.

    Pressing down firmly.

    Bake at 375 for 10 minutes Remove add zucchini spread, spreading all over it.

    Sprinkle on topping and bake for about 25 - 30 minutes at 375 or until lightly brown.
