- 2 large zucchini
- 2/3 cup lemon juice
- 1 cup sugar
- 1/4 tsp nutmeg
- 1/2 tsp cinnamon

1Peel and remove seeds and pulp from zucchini; then slice, and cut the slices into quarters.

2Simmer, covered, in lemon juice until zucchini is crisp-tender.

3Add sugar and spices, and simmer a few more minutes.

4Next, make the pastry:

54 cups flour 2 cups sugar 1/2 teaspoons salt 1 cup margarine

6Mix all ingredient with a pastry blender Reserving one cup for topping adding 1 teaspoons cinnamon.

7Remove another 1/2 cup and add to cooked zucchini.

8Place remaining pastry mix on greased baking pan.

9Pressing down firmly.

10Bake at 375 for 10 minutes Remove add zucchini spread, spreading all over it.

11Sprinkle on topping and bake for about 25 - 30 minutes at 375 or until lightly brown.
