Ingredients

  • 1/2 c butter
  • 2 eggs, beaten
  • 2 t baking soda
  • 2 1/2 c flour
  • 1/2 t cinnamon
  • 1/2 t powdered cloves
  • 1 c raisins or finely chopped dates
  • 2 c sugar
  • 1 1/2 c unsweetened applesauce
  • 1/2 c boiling water
  • 1/2 t salt
  • 1/2 t allspice
  • 1/2 c chopped walnuts

    Cream together butter and sugar.

    Combine eggs with unsweetened applesauce.

    Then combine baking soda and boiling water.

    Sift together flour, salt cinnamon, allspice and powdered cloves.

    Combine all mixtures and beat well to blend.

    Stir in walnuts and raisins.

    Put into a greased and floured tube pan and bake 1 hour at 350 F.

    Cool completely.

    Wrap tightly with plastic wrap and store in a cool dry place for up to 3 weeks. Can be moistened with brandy or wine.
