- 1 tablespoon lemon juice
- 4 x egg yolks
- 4 x egg whites
- 8 tablespoons sugar
- 1/2 teaspoon vanilla extract
- 1 x lemon zest grated

1Preheat oven to 300F.

2Combine applesauce, lemon juice and rind.

3Beat in egg yolks and pour into baking dish.

4In separate bowl, beat egg whites until peaks form.

5Gradually add sugar while continuing to beat.

6Add vanilla.

7Mix approx.

81/4 of meringue thru applesauce and spoon remaining meringue on top.

9Bake 15 minutes.

10Good hot or cold.
