  • 1/4 c. walnuts
  • 1/2 c. light corn oil margarine
  • 3/4 c. sugar
  • 2 1/2 c. all-purpose flour
  • 1 1/2 c. quick cooking oats
  • 1 (16 oz.) jar applesauce
  • 1 (8 oz.) plain nonfat yogurt
  • 1 (8 oz.) frozen egg substitute
  • 1 Tbsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 1/4 tsp. cinnamon

    Toast walnuts in saucepan over medium heat, shaking pan frequently; chop.

    Blend sugar and margarine; add all other ingredients, stirring until all ingredients are well blended. Bake in a greased tube pan 45 to 50 minutes at 350°.
