- 1 12 cups whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 12 cup brown sugar
- 14 cup orange juice
- 1 tablespoon orange juice
- 2 egg whites
- 1 teaspoon almond extract
- 1 14 cups grated carrots
- 13 cup dried apricot, chopped
- 13 cup chopped walnuts (optional)
Directions

1Combine flour, baking powder, baking soda, and brown sugar in large bowl.

2Stir to mix well.

3Add both 1/4 cup and 1 tablespoons orange juice, egg whites, and almond extract, stir until moistened.

4Fold in carrots, apricots, and walnuts (if you choose to use walnuts).

5Evenly spread in greased loaf pan.

6Bake at 350 F for about 45 minutes or until toothpick inserted in center comes out clean.

7During baking, bread might form some opening crevices, allow for some heat ventilation inside bread.

8Cool completely.

9Serve with a spread of peanut butter for some protein.
