- 3/4 c. margarine or butter
- 1 c. sugar
- 1 egg
- 2 c. all-purpose flour
- 1/4 tsp. baking powder
- 1 1/3 c. shredded coconut
- 1/2 c. chopped walnuts
- 1/2 tsp. vanilla extract
- 1 (12 oz.) jar apricot preserves
Directions

1In a large mixing bowl, cream butter and sugar.

2Add egg; mix well.

3In a separate bowl, combine flour and baking powder. Gradually add to butter mixture.

4Add coconut, walnuts and vanilla extract.

5Mix thoroughly.

6Press 2/3 of dough into a greased 13 x 9 x 2-inch baking pan.

7Spread with preserves.

8Crumble remaining dough over preserves.

9Bake at 350° for 35 minutes or until golden brown.

10Cool in pan on wire rack.
