- 3/4 c. butter (at room temperature)
- 1 egg
- 1/2 tsp. salt
- 1 1/2 c. shredded coconut
- 1 c. walnuts, chopped
- 1 c. sugar
- 1 1/2 tsp. vanilla
- 1 c. flour
- 8 oz. apricot preserves
Directions

1Preheat oven to 350°.

2Cream the butter, sugar, egg and vanilla.

3Mix in salt, flour and coconut. Stir well.

4Reserve 3/4 cup for topping.

5Spread the rest in a greased 9 x 11-inch pan. Spread apricot preserves over mixture and sprinkle nuts over preserves.

6Crumble reserved 3/4 cup dough over top. Bake 30 minutes. Cool and cut into 24 bars.
