  • 3/4 c. butter or margarine
  • 1 c. sugar
  • 1 egg
  • 2 c. all-purpose flour
  • 1/4 tsp. baking powder
  • 1 1/3 c. shredded coconut or less
  • 1/2 c. chopped walnuts
  • 1/2 tsp. vanilla extract
  • 1 (12 oz.) jar apricot or any kind of fruit preserve

    In a large mixing bowl, cream butter and sugar.

    Add egg; mix well.

    In separate bowl, combine flour and baking powder. Gradually add to butter mixture.

    Add coconut, walnuts and vanilla extract; mix thoroughly.

    Press two-thirds of dough into a greased 13 x 9 x 2-inch baking pan.

    Spread with preserves; crumble remaining dough over preserves.

    Bake at 350° for 25 to 35 minutes or until golden brown.

    Cool in pan on wire rack.
