- 3/4 c. butter, room temperature
- 1 c. sugar
- 1 egg
- 1 1/2 tsp. vanilla
- 1/2 tsp. salt
- 2 c. self-rising flour
- 1 1/2 c. shredded coconut
- 12 oz. apricot preserves
- 1 c. chopped nuts (walnuts or pecans)
Directions

1Preheat oven to 350°.

2Cream butter, sugar, egg and vanilla; mix in flour, salt and coconut.

3Stir well.

4Reserve 3/4 cup dough for topping; spread the rest in a 9 x 13-inch pan.

5Spread apricot preserves over mixture and sprinkle with nuts.

6Crumble reserved dough over topping.

7Bake at 350° for 30 minutes.

8Cool slightly and cut into bars.
