- 3/4 c. margarine
- 1 c. sugar
- 1 egg
- 2 c. all-purpose flour
- 1/4 tsp. baking powder
- 1 1/2 c. shredded coconut
- 1/2 c. chopped walnuts or pecans
- 1/2 tsp. vanilla extract
- 1 (12 oz.) jar apricot preserves
Directions

1In a large mixing bowl, cream margarine and sugar.

2Add egg; mix well.

3In a separate bowl, combine flour and baking powder. Add coconut, pecans and vanilla; mix thoroughly.

4Press 2/3 of dough into a greased 13 x 9 x 2-inch baking dish.

5Spread preserves over dough, crumble remaining dough over preserves. Bake at 350° for 30 to 35 minutes or until golden brown.

6Cool in pan, cut into bars.

7Yields 36 bars.
