- 2 1/4 sticks margarine
- 1 c. sugar
- 1 egg
- 3 c. sifted flour
- 2 tsp. baking powder
- few drops lemon extract
- 1 large jar apricot preserves
Directions

1Butter a 9 x 13-inch pan.

2Preheat oven to 350°.

3Melt margarine; add to sugar.

4Add egg, flour and baking soda; mix well.

5Then add lemon extract.

6Put a large handful of dough in freezer.

7Pat rest of mixture into pan and cover with preserves. Then crumble the chilled dough over the top and bake for 35 minutes.
