- 1 c. snipped dried apricots
- 2 c. warm water
- 1 c. sugar
- 2 Tbsp. butter or margarine, softened
- 1 egg
- 3/4 c. orange juice
- 2 c. all-purpose flour
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1 tsp. salt
- 3/4 c. chopped nuts
Directions

1Soak apricots in warm water for 30 minutes.

2Meanwhile, in a mixing bowl, cream the sugar, butter and egg.

3Stir in orange juice.

4Combine flour, baking powder, baking soda and salt.

5Stir into creamed mixture just until combined.

6Drain apricots well; add to batter with nuts.

7Pour into greased 9 x 5 x 3-inch loaf pan.

8Bake at 350° for 55 minutes or until bread tests done.

9Cool 10 minutes in pan before removing to a wire rack.

10Yields 1 loaf.
