Ingredients
- 3/4 c. dried apricots
- 1 c. warm water
- 3/4 c. white flour
- 3/4 c. whole wheat flour
- 1/2 c. wheat germ
- 3/4 c. rolled oats
- 2/3 c. sugar
- 1 Tbsp. baking powder
- 1/4 tsp. baking soda
- 3/4 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. freshly ground nutmeg
- 1 egg, beaten lightly
- 2 Tbsp. melted shortening or oil
- 1/2 to 3/4 c. chopped walnuts
Directions

1Soak dried apricots in warm water for 30 minutes.

2Save water. Sift together flour, wheat germ, rolled oats, sugar, baking powder, baking soda, salt, cinnamon and nutmeg.

3Add egg, oil, 3/4 cup of the saved apricot water, walnuts and the coarsely chopped apricots.

4Place batter in a greased loaf pan.

5Bake at 350° for about 50 minutes or until done.

6Cool for 10 minutes and remove from pan.

7Store for 24 hours before serving.
