- 2 cups pureed fresh apricots
- 13 cup sugar
- 1/2 cup dry white wine
- 1 teaspoon finely grated fresh ginger
Directions

1Heat the sugar and wine with ginger until sugar is dissolved.

2Stir into pureed apricots.

3Taste for sweetness, adding more sugar if necessary.

4Place mixture in shallow pan and freeze.

5When mixture begins to freeze, stir well to break up.

6Return to freezer and freeze for 20 minutes; remove and stir well again.

7Cover and freeze completely.

8To serve, allow to defrost for 10 minutes.
