Apricot Glazed Pork Chops

  • 4 Pork rib
  • loin chops, 1/2-inch thick
  • 1 tsp. salt
  • 1 tbsp. oil
  • shortening
  • 1 can (1 lb.) apricot halves, drained, reserving liquid
  • 1-1/2 cup reserved apricot liquid plus water to equal
  • 2 tbsp. cornstarch
  • 2 tsp. lemon juice
  • 2 tbsp. slivered almonds

Directions

    Sprinkle chops with salt.

    Brown in oil on both sides in frying pan.

    Add 1/2 c of the apricot liquid.

    Cover, reduce heat and simmer for 10 minutes.

    Combine cornstarch and remaining 1 c apricot liquid.

    Add to chops.

    Continue simmering, stirring frequently, until liquid thickens.

    Add apricots and almonds.

    Cover and continue simmering for 10 minutes.
