- 2 1/2 c. flour
- 1 c. sugar
- 3 1/2 tsp. baking powder
- 1 tsp. salt
- 1 Tbsp. plus 1 tsp. grated orange rind
- 3 Tbsp. oil
- 1/2 c. milk
- 3/4 c. orange juice
- 1 egg
- 1 c. finely chopped nuts
- 1 c. finely cut-up dried apricots
Directions

1Heat oven to 350°.

2Grease and flour 1 large or 2 small loaf pans.

3Measure all ingredients into a large mixing bowl; beat on medium speed for 1/2 minute.

4Pour into pan(s).

5Bake 55 to 65 minutes or until toothpick in center comes out clean.

6Remove from pan(s) and cool thoroughly before slicing.
