- 2 1/2 c. plain flour
- 1 c. sugar
- 3 1/2 tsp. baking powder
- 1 tsp. salt
- 1 Tbsp. plus 1 tsp. grated lemon peel
- 3 Tbsp. salad oil
- 1/2 c. milk
- 3/4 c. orange juice
- 1 egg
- 1 c. finely chopped nuts
- 1 c. finely chopped dried apricots
Directions

1Heat oven to 350°.

2Grease and flour loaf pan (9 x 5 x 3-inch or two 8 1/2 x 4 1/2 x 2 1/2-inch pans).

3Measure all ingredients into large mixer bowl; beat on medium speed 1/2 minute.

4Pour into pans.

5Bake 55 to 60 minutes or until wooden pick inserted in center comes out clean.

6Remove from pan; cool thoroughly before slicing.
