  • 2 c. chopped, dried apricots
  • 1 c. boiling water
  • 1/4 c. shortening
  • 1 1/2 c. sugar
  • 2 eggs
  • 3 c. flour
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. chopped walnuts

Directions

    Pour 1 cup boiling water over apricots.

    Let stand 15 minutes. Cream together shortening and sugar.

    Add eggs and mix well.

    Now add apricot mixture.

    Add flour, salt and soda.

    Mix well.

    Add walnuts.

    Pour into two greased bread tins.

    Bake 1 hour in a 325° to 350° oven.
