- 1 1/3 c. dried apricots, cut up
- 2 eggs, beaten
- 1 3/4 c. sugar
- 3 Tbsp. soft butter or margarine
- 1/3 c. water
- 3/4 c. frozen orange juice
- 3 tsp. baking powder
- 3/4 c. chopped, toasted almonds
- 3 c. flour
- 1/2 tsp. soda
- 1/2 tsp. salt
Directions

1Soak apricots in warm water for 2 hours.

2Drain well.

3Mix sugar, butter, eggs, water and orange juice.

4Add dry ingredients and add to first mixture, blending thoroughly.

5Fold in apricots and nuts.

6Pour into three 1 pound pans that have been greased and lined with waxed paper.

7Bake at 350° for 55 minutes or until done.
