Ingredients

  • 1 1/3 c. dried apricots, cut up
  • 2 eggs, beaten
  • 1 3/4 c. sugar
  • 3 Tbsp. soft butter or margarine
  • 1/3 c. water
  • 3/4 c. frozen orange juice
  • 3 tsp. baking powder
  • 3/4 c. chopped, toasted almonds
  • 3 c. flour
  • 1/2 tsp. soda
  • 1/2 tsp. salt

Directions

    Soak apricots in warm water for 2 hours.

    Drain well.

    Mix sugar, butter, eggs, water and orange juice.

    Add dry ingredients and add to first mixture, blending thoroughly.

    Fold in apricots and nuts.

    Pour into three 1 pound pans that have been greased and lined with waxed paper.

    Bake at 350° for 55 minutes or until done.
