  • 1 c. Sugar
  • 2 Tbsp. Shortening
  • 1 x Egg
  • 3/4 c. Lowfat milk
  • 3/4 c. Orange juice
  • 4 tsp Grated orange rind
  • 3 c. Flour
  • 3 1/2 tsp Baking pwdr
  • 1 c. Finely minced dry apricots
  • 3/4 c. Minced nuts

Directions

    Combine sugar, shortening and egg.

    Stir in lowfat milk, juice and rind.

    Sift flour, baking pwdr, salt and add in to other mix.

    Combine apricots and nuts; add in to batter.

    Pour into greased loaf pan and let stand 20 min.

    Bake at 350 for 50-60 min.
