- 2 lb. apricots (fresh or canned)
- 3/4 c. sugar
- 1/4 c. brown sugar
- 2 Tbsp. lemon juice
- 3 Tbsp. quick cooking tapioca
- pinch of salt and cinnamon
- 1 egg, beaten
- 5 or 6 pats of butter
Directions

1In a large bowl, mix together the apricots and lemon juice. Lightly mix in all remaining ingredients and let stand 15 minutes. Use your favorite pastry or prepared pie shell or following recipe.

2Bake for 45 minutes in a 400° oven.
