  • 1 whole Tomato, Medium, Finely Chopped
  • 3 Tablespoons White Onion, Finely Chopped
  • 2 teaspoons Jalapeno, Finely Chopped
  • 1 Tablespoon Fresh Cilantro, Chopped
  • 1 teaspoon Salt
  • 1/2 teaspoons Red Wine Vinegar
  • 1/2 whole Lime, Juiced
  • 2 whole Apricots, Pitted And Chopped
  • 1 teaspoon Orange Blossom Honey

Directions

    Finely chop the tomato, onion, jalapeno and cilantro.

    Combine them in a medium-sized bowl.

    Sprinkle with salt, red wine vinegar and lime juice and stir until mixed.

    Chop the apricots, removing the stone, and add to the mixture.

    Drizzle with honey and stir well.

    Feel free to adjust ingredient amounts to taste.

    (I love cilantro so I added extra.
