- 6 chicken breast fillets
- 1 pkg. fresh spinach
- 1 small pkg. Feta cheese
- 1 pkg. seasoned bread crumbs
- 2 eggs
- 1/2 c. olive oil
- 1/2 lb. mushrooms
- 1/2 c. white wine
- 2 Tbsp. cornstarch
- 1 tsp. chicken base
- 1 Tbsp. butter or margarine
- 1/2 c. water
- salt and pepper
- fresh parsley
- 1 orange
Directions

1Place chicken breast fillets on cutting board and pound with meat mallet until slightly flat.

2Saute spinach in saucepan with butter (2 minutes).

3Spread small portions of spinach on fillets with Feta cheese.

4Holding mixture in center of the fillet, fold both sides and pin with a toothpick.
