Ardsheal House Cheese Soup

Ingredients
- 2 Tbsp. butter
- 3/4 c. chopped onion
- 1/2 lb. Stilton cheese, crumbled
- 1/2 lb. Cheddar cheese, crumbled
- 1/3 c. flour
- 3 c. chicken broth
- 1 c. heavy cream
- 1/3 c. dry white wine
- 1 bay leaf
- salt and pepper to taste
- milk for thinning (if desired)
Directions

1Heat the butter in a saucepan and saute onion until wilted. Add the crumbled cheeses, sprinkle on the flour and cook, stirring, about 2 minutes.

2Remove from stove and gradually add the liquids and seasonings.

3Return to heat and bring the soup to a boil, then simmer 5 to 10 minutes.

4Remove the bay leaf and thin the soup with a little milk if desired.

5Serves 8.
