  • 36 cucumber pickles (5-inch long)
  • 1 gal. water
  • 1 c. salt
  • 1 Tbsp. alum
  • 1 Tbsp. ginger
  • 3 lb. white sugar
  • 1 gal. vinegar
  • 1 pt. water (or more)
  • 1 spice bag with 1 Tbsp. celery salt, 1 Tbsp. whole cloves, 1 tsp. salt and 2 sticks cinnamon

    Slice cucumbers thin.

    Make cool brine of water and salt. Pour over cucumbers and let stand 1 week.

    Stir every morning. Drain pickles and cover with cold water (just to cover) mixed with alum.

    Simmer 10 minutes, then drain.
