Arkansas Campfire Potatoes

  • 5 to 6 medium potatoes, peeled and sliced
  • 1 pkg. (about 1 lb.) Polish sausage (smoked or link), sliced thin
  • 1 can stewed tomatoes or Ro-Tel
  • 1 small bell pepper, chopped
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 tsp. sugar
  • 2 Tbsp. cooking oil

Directions

    Cook potatoes in oil in a large frying pan with lid.

    Just before potatoes are done, add remaining ingredients.

    Cover pan and steam until potatoes are tender.

    Remove lid and let liquid cook away.
