- 1/2 eggplant
- 1 green bell pepper
- 1 potato
- 1 large onion
- 2 carrots
- 1/4 lb. green beans
- 2 zucchini squash
- 2 summer squash
- mushrooms
- 2 fresh tomatoes
- 2 (8 oz.) cans tomato sauce
- 1/2 c. oil
- 2 Tbsp. butter
Directions

1Cut all vegetables into medium size pieces into large bowl. Add oil and tomato sauce.

2Mix together and pour into large baking pan and cover with foil.

3Cook at 350° for 1 hour.

4Baste every 20 minutes.

5If it gets dry, add more sauce.
