  • 3 1/3 lb chicken thigh fillets, chopped coarsely
  • 1 2/3 cups chicken stock
  • 1/2 cup lime juice
  • 1/4 cup fish sauce
  • 1 (4 inch) piece fresh lemongrass, chopped finely
  • 1 (1 inch) piece fresh ginger, grated
  • 3 cloves garlic, minced
  • 9 oz small oyster mushrooms
  • 1 lb baby bok choy, chopped coarsely
  • 4 None spring onions, sliced diagonally
  • 1 None fresh red Thai chili, sliced thinly
  • 1/2 cup fresh cilantro leaves
  • 2 tbsp fresh mint leaves

Directions

    Combine chicken, stock, lime juice, fish sauce, lemongrass, ginger, garlic and mushrooms in a 4.5-quart slow cooker. Cook, covered, on low, for 6 hours.

    Add bok choy and cook, covered, for 30 mins, or until bok choy is tender. Serve chicken mixture topped with remaining ingredients.
