- 2 (6 oz.) jars marinated artichoke hearts, undrained
- 3 green onions, chopped
- 1 clove garlic, crushed
- 4 large eggs
- 1/8 tsp. pepper
- 2 c. (8 oz.) shredded sharp Cheddar cheese
- 6 saltine crackers, crumbled
- 2 Tbsp. chopped fresh parsley
Directions

1Drain artichoke hearts, reserving liquid.

2Chop artichokes and set aside.

3Pour artichoke liquid into a 9-inch skillet.

4Add green onions and garlic and cook until tender.

5Drain.

6Combine eggs and pepper in a large bowl; beat mixture well.

7Stir in artichokes, onion mixture, cheese, crackers and parsley.
