  • 1 (4 oz.) jar diced pimentos
  • 1 (14 oz.) can artichoke hearts, drained and coarsely chopped
  • 1 1/2 c. mayonnaise
  • 8 oz. diced green chiles, drained and chopped
  • 4 oz. Monterey Jack cheese
  • 1/2 c. Parmesan cheese

Directions

    Drain pimentos and reserve 2 teaspoons pimentos for top.

    Mix the rest in a bowl and bake uncovered at 350° for 30 minutes or until bubbly.

    Serve with taco chips.
