Artichoke Dressing

Ingredients
- 8 oz. olive oil
- 2 cans artichoke hearts, broken in pieces
- 5 ribs celery
- 8 large pieces garlic
- 1 1/2 c. Italian cheese
- 8 oz. Italian bread crumbs
- lemon
- salt and pepper to taste
Directions

1In a large pot, put about 6 ounces of olive oil.

2Chop celery and garlic and add to olive oil.

3Cook until clear.

4Add artichoke hearts, saving a little of the liquid from the artichoke can.

5Add bread crumbs a little at a time until fairly stiff.

6Add the extra olive oil and water if needed.

7Put 1 cup cheese in mixture and slowly cook on a low fire for 1/2 hour.

8Salt and pepper to taste (be careful with the salt as the cheese is salty also).

9Place dressing in casserole dish and cover with the rest of the cheese. Slice lemon on top of dressing.

10Bake for about 1/2 hour on a low setting.
