- 2 jars marinated artichoke hearts
- 1/4 c. bread crumbs
- 2 Tbsp. parsley
- salt, pepper and oregano to taste
- 1 small onion, chopped
- 4 eggs
- 1/2 lb. sharp Cheddar cheese, shredded
Directions

1Drain liquid from one jar of artichokes into pan.

2Chop artichokes and set aside.

3Add onion to liquid in pan and saute. (Add a little garlic salt.)

4Beat eggs; add bread crumbs and seasonings.

5Stir in cheese, parsley, artichokes and onion.

6Put in greased 9 x 9-inch pan.

7Bake at 325° for 30 minutes.

8Cut into 1-inch squares and serve hot or cold.
