- 2 (6 oz.) jars marinated artichoke hearts
- 1 small onion, finely diced
- 4 eggs
- 1/4 c. fine bread crumbs
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. oregano
- 1/8 tsp. Tabasco
- 1/2 lb. sharp Cheddar cheese (approximately 2 c.)
- 2 Tbsp. parsley, minced
Directions

1Drain marinade from 1 jar of artichoke hearts into a frying pan.

2Add onion and saute until softened.

3Drain liquid from other jar of artichoke hearts and discard.

4Chop artichokes into small pieces.

5In a bowl, beat eggs with fork.

6Add crumbs, salt, pepper, oregano and Tabasco sauce.

7Stir in cheese, parsley, artichokes and onion.
