- 5 artichoke hearts
- 2 Tbsp. minced onion
- 1 clove garlic, minced
- 3 Tbsp. oil
- 3 Tbsp. butter
- 5 eggs, beaten
- 1/2 c. parmesan cheese
Directions

1Cook first 5 ingredients in a heavy saucepan until almost done.

2Cool slightly then add eggs and cheese.

3Put in an oiled casserole and bake in a 300° oven for 25 to 30 minutes.
