Ingredients

  • 5 artichoke hearts
  • 2 Tbsp. minced onion
  • 1 clove garlic, minced
  • 3 Tbsp. oil
  • 3 Tbsp. butter
  • 5 eggs, beaten
  • 1/2 c. parmesan cheese

Directions

    Cook first 5 ingredients in a heavy saucepan until almost done.

    Cool slightly then add eggs and cheese.

    Put in an oiled casserole and bake in a 300° oven for 25 to 30 minutes.
