- 1/2 c. shredded Mozzarella
- 2 cans artichoke hearts, quartered and drained
- 1 double pie crust (Pillsbury)
- 4 eggs
- 1/2 c. grated Parmesan cheese
Directions

1In a bowl mix eggs and Parmesan cheese.

2Saute one small onion. Add artichokes and slightly brown.

3Remove from pan with slotted spoon.

4Place into raw pie shell.

5Pour egg mixture over all.

6Top with Mozzarella.

7Cover with second pie crust.

8Slit crust lightly. Bake 45 minutes in preheated 350° oven.
