- 2 pkg. frozen artichokes or spinach
- 2 sheets frozen puff pastry, thawed
- 5 Tbsp. Ricotta cheese
- 2 eggs
- 2 Tbsp. olive oil
- 2 Tbsp. Parmesan cheese
Directions

1Thaw and chop the artichokes.

2In a large skillet, cook the artichokes in the oil over low heat for 5 minutes.

3Add the Ricotta cheese and Parmesan cheese and stir the eggs in the mixture.

4Season with salt.

5Line an 8-inch pan with 1 sheet of puff pastry.

6Pour the mixture into the pastry case.

7Cover with the remaining sheet of puff pastry.

8Seal and trim the edges. Bake the pie in a preheated 350° oven for about 40 minutes or until the pastry begins to brown.
