Ingredients

  • 1 (14 oz.) can artichokes, drained
  • 1/2 c. chopped onion
  • 1 clove garlic, minced
  • 1/4 c. water
  • 1 egg
  • 2 egg whites
  • 1/4 c. breadcrumbs
  • pepper to taste
  • 1/2 tsp. dried oregano
  • dash of red pepper
  • 1/2 c. grated zucchini
  • 3/4 c. shredded, reduced-fat Monterey Jack cheese
  • 1/4 c. shredded, reduced-fat Cheddar cheese

Directions

    Chop artichoke hearts in food processor or finely by hand; set aside.

    Saute the onion and garlic in water until tender; set aside.

    In small bowl, beat egg and egg whites until frothy.

    Stir in remaining ingredients, mixing until well combined.

    Transfer mixture into a 9 x 9 x 2-inch baking pan coated with nonstick cooking spray.

    Bake at 350° for 30 minutes.

    Cut into squares and serve.

    Yields 25 squares.
