Ingredients
- 1 (14 oz.) can artichokes, drained
- 1/2 c. chopped onion
- 1 clove garlic, minced
- 1/4 c. water
- 1 egg
- 2 egg whites
- 1/4 c. breadcrumbs
- pepper to taste
- 1/2 tsp. dried oregano
- dash of red pepper
- 1/2 c. grated zucchini
- 3/4 c. shredded, reduced-fat Monterey Jack cheese
- 1/4 c. shredded, reduced-fat Cheddar cheese
Directions

1Chop artichoke hearts in food processor or finely by hand; set aside.

2Saute the onion and garlic in water until tender; set aside.

3In small bowl, beat egg and egg whites until frothy.

4Stir in remaining ingredients, mixing until well combined.

5Transfer mixture into a 9 x 9 x 2-inch baking pan coated with nonstick cooking spray.

6Bake at 350° for 30 minutes.

7Cut into squares and serve.

8Yields 25 squares.

9These are great warm, room temperature or even reheated.
