- 2 (6 ounce) jars marinated artichokes
- 1 small onion, finely chopped
- 4 eggs
- 6 soda crackers, crushed
- 14 teaspoon salt
- 18 teaspoon pepper
- 18 teaspoon oregano
- 12 lb sharp cheddar cheese, grated (2 cups)
- 2 tablespoons minced parsley
Directions

1Preheat oven to 325.

2Drain artichokes and pat dry.

3Use some of the drained oil to saute onion in frying pan, until onion is tender.

4Chop artichokes.

5(May be chopped in food processor).

6Beat eggs; add crushed crackers and seasonings.

7Stir in cheese, artichokes and onion.

8Pour into greased 7 x 11-inch greased pan.

9Bake at 325 for 30 minutes or until set.

10Cool and cut into squares.

11Serve as finger food.
