  • 1/2 cups Olive Oil
  • 6 stalks Scallions/Green Onions, Chopped
  • 16 ounces, weight Frozen Lima Beans
  • 1/2 cups Dill Fresh, Chopped
  • 2 cups Water
  • 1 dash Salt And Pepper, to taste
  • 16 ounces, weight Canned Artichokes

Directions

    In a pot on medium heat, add olive oil and scallions sauteing until scallion whites are translucent.

    Add lima beans and dill and saute for 2 more minutes.

    Add water, salt and pepper and bring to a boil.

    Add artichokes and cook for 4o minutes.

    Serve with your favorite protein, fish or lamb, or enjoy on its own as a main meal.
