- 1/2 cups Olive Oil
- 6 stalks Scallions/Green Onions, Chopped
- 16 ounces, weight Frozen Lima Beans
- 1/2 cups Dill Fresh, Chopped
- 2 cups Water
- 1 dash Salt And Pepper, to taste
- 16 ounces, weight Canned Artichokes
Directions

1In a pot on medium heat, add olive oil and scallions sauteing until scallion whites are translucent.

2Add lima beans and dill and saute for 2 more minutes.

3Add water, salt and pepper and bring to a boil.

4Add artichokes and cook for 4o minutes.

5Serve with your favorite protein, fish or lamb, or enjoy on its own as a main meal.
