Asian Black Rice Pudding

Ingredients
- 1 12 cups black rice, glutenous
- 2 liters water
- 1 cinnamon stick
- 1 star anise
- 1 clove
- 400 ml coconut milk
- 13 cup brown sugar, plus
- 1 tablespoon brown sugar
- 14 teaspoon mixed spice
- 2 bananas
- 2 slices fresh pineapple
- 30 g butter
Directions

1Soak rice 3 hour or overnight.

2Drain rice.

3Then combine rice, water and spices in a large pot.

4Bring to the boil, then simmer for 40-45 minutes or until tender.

5Drain.

6Put 1/2 cup coconut milk, 1/3 cup sugar and mixed spice powder into the empty pot.

7Stir over low heat until the sugar is disolved.

8Add rice, cook 4-5 minutes or until the liquid is absorbed.

9Lay out fruit on a cookie sheet.

10Top with sugar and dot with butter.

11Grill 5-10 minutes til golden.

12To serve: Place rice pudding in the bowl.

13Top with grilled fruit and drizzle with remaining coconut cream.
