Asian Style Rice Rolls

- 1/2 Onion, finely chopped
- 1 package Mushrooms
- 1 bag Spinach
- 1 pound Ground turkey
- 1 cup Rice
- 1 package Rice paper
- 1 teaspoon Soy sauce
- 1 teaspoon Sesame oil
- 1 teaspoon Rice vinegar
- 1 Lemon
Directions

1Add olive oil to a frying pan. When hot, add chopped onion and ground turkey. Add a dash of lemon juice.

2Rinse rice thoroughly. Put 1 cup rice with 1 1/2 cups water and a pinch of salt in a pan. Bring to a boil, then simmer with lid 15-20 minutes.

3Mix together all ingredients and add them onto rice paper. Roll up, using water to wet edge to stick.

4Serve with a bit of fresh mint, cilantro and peanuts as garnish. Figure out a good dipping sauce.
