Asparagus Frittata

  • 14 oz new potatoes, scrubbed
  • 4 None eggs
  • 1/3 cup milk
  • 1 tbsp chopped parsley
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 11 oz asparagus, trimmed
  • None None Edible flower petals, to garnish (optional)

Directions

    Cook the potatoes in boiling salted water for 15-20 mins. Drain and rinse under cold water. Cut into thick slices.

    Preheat the oven to 400°F. Beat the eggs with the milk. Stir in the parsley and season with salt and freshly ground black pepper.

    Heat the oil in an 9 inch oven-proof skillet on medium heat. Add the onion, asparagus and potato. Cook and stir for 5 mins. Pour the egg mixture over the top. Reduce the heat to low and cook for 3-5 mins.

    Transfer to the oven and bake for 10-15 mins until cooked through. Garnish with edible flower petals (if using).
