Asparagus Quiche

Ingredients

  • 1 pound fresh baby asparagus, trimmed and cut into 1/2 inch pieces.
  • 10 slices bacon
  • 2 T. butter
  • 1 onion, chopped
  • 1 tsp. minced garlic
  • 4 eggs, beaten
  • 1 1/2 C. half & half cream
  • 1/4 tsp. nutmeg
  • salt and pepper to taste
  • 2 C. Swiss Cheese or shredded mozzarella

    Preheat oven to 400 degrees

    Place asparagus in steamer over boiling water. Cook until tender but firm. 2-5 min. Fry bacon until crisp. Set out onto a paper towel.

    If using a single crust, Place into a quiche dish, prick with a fork and weight down crust. Bake for 10 min. in preheat oven. Remove from oven.

    Add pizza ingredients: fried and crumbled bacon, chopped asparagus, and cheese. Top with beaten eggs mixed with spices and garlic.

    Bake uncovered for 35-40 min. Let cool slightly before cutting.
