Asparagus Rollups

  • 24 slices sandwich bread
  • 1/2 c. softened butter
  • 8 oz. softened cream cheese
  • 4 oz. softened blue cheese
  • 24 spears fresh asparagus, parboiled or frozen asparagus partially cooked & well drained
  • 1/2 c. melted butter

Directions

    Trim crusts from bread slices.

    Flatten each slice with a rolling pin.

    Mix softened butter with cheeses.

    Spread cheese mixture on each bread slice and top with an asparagus spear.

    Roll bread around the asparagus and dip in melted butter.

    Cut each roll into 4ths and freeze.

    When ready to serve, bake in preheated 400° oven for 15 minutes.
