  • 1 can green asparagus spears
  • 1 tsp. white wine vinegar
  • 1 Tbsp. minced green onion
  • 1 Tbsp. pimiento
  • 1/2 c. mayonnaise
  • 1/2 tsp. Dijon or regular mustard
  • 1 hard-boiled egg, grated
  • shredded lettuce

Directions

    Divide asparagus on four beds of shredded lettuce.

    Combine mayonnaise, vinegar, mustard and onion.

    Spoon over asparagus. Top with grated egg.
