- 2 lb. fresh asparagus (trimmed)
- 3 Tbsp. olive oil
- 2 Tbsp. lemon juice
- 2 tsp. Dijon mustard
- 1/2 tsp. black pepper
- 1/4 tsp. salt
- 4 Tbsp. buttered and toasted bread crumbs
- 6 cherry tomatoes (halved)
Directions

1In a large saucepan, steam asparagus until tender;

2drain and place on a serving platter.

3In a small jar with a lid, shake together oil, lemon juice, mustard, pepper, and salt.

4When ready to serve (warm or at room temperature), pour vinaigrette evenly over asparagus;

5sprinkle with bread crumbs and garnish with cherry tomato halves.
