Ingredients

  • One 6 oz. package Rice Pilaf (we like Farmhouse)
  • 1 clove garlic, minced
  • 1 teaspoon grated lemon rind
  • 1 Tablespoon olive or vegetable oil
  • 2 cups water
  • 1 teaspoon oregano
  • 1 cup sliced scallions
  • 1/4 cup frozen spinach, thawed and squeezed dry
  • 1 cup chopped fresh tomato
  • 1/4 lb. finely crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 cup black olives, halved
  • 1 Tablespoon lemon juice
  • 2 teaspoons chopped fresh dill

Directions

    In a large saucepan, saute garlic and lemon rind in oil.

    Add water and oregano; bring to a boil.

    Add rice and contents of seasoning packet; return to a boil and add scallions.

    Reduce heat to low; cover and cook 20 minutes.

    Gently combine cooked rice mixture with spinach, tomatoes, cheese, parsley, olives, lemon juice, and dill.
