- 2 c. peeled and sliced carrots
- 1/4 lb. string beans, ends cut and broken in halves
- 1/2 lb. potatoes, peeled and cubed
- 1/4 c. vegetable oil
- 1/3 c. sliced Spanish onion
- 1/4 tsp. cardamon
- 1 tsp. grated ginger root
- 1 tsp. minced garlic
- salt
Directions

1Boil carrots, string beans and potatoes separately in enough water to cover each.

2Boil carrots and potatoes about 15 minutes, beans about 10 minutes.

3In Dutch oven, heat oil.

4Saute onion until brown.

5Add cardamon, ginger, garlic and salt to taste; stir well to blend.

6Add vegetables.

7Let simmer about 3 minutes. Makes 4 to 6 servings.
