French-Fried Yams

- 3 yams, about 1 3/4 pounds
- Corn, peanut or vegetable oil for deep-frying, about 8 cups
Directions

1Peel the yams, and cut them crosswise, slightly on the diagonal, into 1/8-inch thick slices.

2Stack a few slices at a time and cut them into matchstick strips about 1/8 inch wide.

3There should be about 6 cups.

4Heat the oil in a deep-fat fryer or skillet to a temperature of about 360 degrees.

5Add half of the potato sticks, and cook about 5 minutes or until crisp.

6Drain and pat dry on paper towels.

7Add the remaining potato sticks, and cook and drain in the same manner.

8Add to the first batch and serve.
